Blue cheese and feta cheese are two of the less common cheeses eaten, but also amongst the most useful for use in recipes and both are incredibly flavoursome.

Blue cheese is a rich, strong cheese that comes in many varieties, among the most famous being Roquefort, Stilton, and gorgonzola.

Feta Cheese Origins

Feta is a soft, crumbly cheese usually made from sheep’s milk and produced exclusively in Greece. It is a skinless cheese with a creamy texture and flavour, which is partly why feta cheese recipes are so popular worldwide.

Feta Cheese Recipes

Creamy Caesar Feta Cheese Salad

Enjoy this great looking Caesar salad topped with delicious feta cheese and croutons that are quick to make and ideal for a light lunch.

Ingredients (serves 4):

6 cups of mixed salad greens

2 tablespoons lemon juice

2 tablespoons of grated Parmesan cheese

1/3 cup mayonnaise

2 tablespoons milk

4 muffins

Olive oil cooking spray

1 teaspoon salt

Halved, 12 cherry tomatoes

½ teaspoon of garlic powder

4 oz. of feta cheese

1 large green bell pepper, chopped

Method :

1:

Mix all ingredients except olive oil spray and muffins, in a bowl

2:

Prepare the oven by preheating 400°F, spray olive oil on muffins and sprinkle salt and garlic powder. Cut them into smaller pieces and place on a baking sheet. Bake for 10 minutes until crisp at 400°F

3:

Pour salad ingredients on a large bowl, and top with the crispy croutons.

 

Tip: This feta cheese recipe is perfect for picnics and barbecues. To save time use this immersion blender to mix the dressing. 

Traditional Feta Cheese in Vine Leaves

This feta recipe uses grapevine leaves which are used traditionally in classic greek feta cheese recipes such as meze. Softened in boiling water and then the cheese is enhanced with sweet-smelling ingredients and cooked in the oven. The leaves hold the flavors inside and come to be slightly crunchy, giving the finished dish a pleasant smoothness.

Ingredients :

6 – 8 Grapevine leaves

7 ounces of Greek feta cheese

Lemon zest

Olive oil

1 clove of garlic

Chili flakes

4 sprigs of oregano

Method :

1:

Boil the vine leaves in boiling water for around 20 seconds.  Then place in cold water. Dry the vine leaves and arrange on a chopping board or work surface by overlapping so as to form a pocket to hold the feta cheese.

2:

Locate the lump of feta cheese right in the center of the vine leaves and add grated garlic and lemon zest. Sprinkle chili flakes and add a dash of olive oil.

3:

Fold the feta cheese into a parcel one leaf at a time until it is fully covered.

4:

Place on a non-stick baking tray and bake in oven at 320°f for 15 minutes.  Allow cooling for 10 minutes prior to serving.

Tip: Serve with a tomato and onion salad. For added authenticity add a bowl of black olives.

Greek Lamb Burgers with Feta

These lamb burgers are crammed full of flavor from fragrant herbs, feta cheese, tomato sauce, and a balsamic glaze. Simple to make, they’re a brilliant and healthy alternative to normal beef burgers. The addition of pitta bread instead of a burger bun makes for a tasty twist and makes this one of our favorite feta cheese recipes.

Ingredients (serves 8)

2 thinly sliced red onions

shallots,2 minced

chopped mint, 4 tablespoons

48 ounces Ground Lamb

chopped oregano, 2 teaspoons

paprika, 2 teaspoons

chopped flat-leaf parsley, 4 tablespoons

8 Pitta bread

Olive oil

black pepper

Balsamic vinegar glaze

Feta cheese

Tomato Relish

Method :

1:

In a large mixing bowl, add the ground lamb, shallot, garlic, mint, parsley, oregano, and paprika. Lightly blend until combined. Form the mixture into eight 6 ounce patties. Season both sides of the patties with freshly ground salt and pepper.

2:

Lightly oil the barbecue grill or electric griddle and grill the patties for about 5 minutes on each side. Remove the patties and place on a warm plate or chopping board and let them rest for a further 5 minutes.

3:

While the ground lamb patties are resting, gently brush the pitta bread with olive oil and grill until they start to puff and become somewhat crispy. Grate the feta with a cheese grater.

4:

Cut a pocket into the pitta with a sharp knife and place the lamb patties into each pitta bread and dress with balsamic glaze, grated feta cheese, tomato relish, and sliced red onion. Plate up and serve immediately.

Traditional Moussaka with Feta Cheese

Try our delicious moussaka with feta cheese recipes for an appetizing supper or informal dinner.

Ingredients (serves 6) :

1 ¼ cups odiced tomatoes

1½ pounds eggplants1 tablespoon olive oil

¼ cup red wine

finely chopped onion, 1 cup

ground lamb,1 ½ pound

½ pound Greek feta cheese

minced garlic, 2 teaspoons

ground pepper

½ teaspoon of cayenne pepper

¼ teaspoon of ground cinnamon

¼ cup red wine

2 tablespoons tomato puree

1 egg yolk

1 tablespoon  butter

½ cup of beef broth

1 cup fresh milk

2 tablespoons  flour

5 tablespoons  olive oil

Method :

1:

Make sure the oven is preheated to 500 degrees.

2:

Remove both ends of the eggplant and chop into 12 slices of identical thickness.

3:

Warm olive oil in an electric skillet put chopped onion and minced garlic. Cook onion until softened. Add the ground lamb and cook, breaking it down with a wooden spoon remove any lumps so as to give a nice consistency. Add the pepper salt, cinnamon,  and cayenne. Continue stirring the mixture until the meat is nicely cooked.

4:

Add beef broth, red wine, 1 cup tomatoes, and tomato puree and stir. Simmer for around 10 minutes.

5:

In the meantime, soften butter in a pan and add flour, mixing gently with a whisk. Add the milk, mixing briskly with a whisk until smooth. Season with freshly ground salt and pepper to taste. Mix in the left over diced tomatoes.  Cook for 5 minutes. Add egg yolk and remove the pan from heat.

6:

Sprinkle the eggplant pieces with pepper and salt. Warm 1 tablespoon olive oil in a large electric skillet and add sufficient eggplant pieces to cover the base of the skillet. Cook for  45 seconds on each side, turn the eggplant slices and again cook for more 45 seconds. Take out the eggplant slices and drain excess oil. Cook the other eggplant slices in the same way adding olive oil where needed.

7:

Place a 1/3 of the eggplant pieces in a layer at the bottom of a large baking dish. Ladle a third of the ground lamb mixture on the eggplant pieces. Continue to make the layers, in the same way, finishing with a layer of ground lamb sauce.

8:

Scatter the feta cheese on the top to finish and place the moussaka in the oven. Bake for 15 minutes.

Tip: For a crispy topping, place the dish under a hot grill to nicely brown the cheese.

Feta Cheese Stuffed Chicken Breast with Parma Ham

Combined with the tangy Dijon Mustard, these yummy Feta Cheese Stuffed Chicken Breasts wrapped in Parma Ham taste marvelous and will impress your guests. One of the finest feta cheese recipes.

Ingredients (serves 6) :

6 Chicken Breasts

12 slices of Parma Ham

6 ounces of Feta Cheese

18 Stalks of Asparagus

2 tablespoons of Olive Oil

2 tablespoons Butter

Freshly ground Salt and Pepper

3 tablespoons of Dijon Mustard

Method :

1:

Place cling film over the chicken breasts and bash them out with a meat tenderizer or rolling pin. Add salt and pepper and slice the fillets in half.

2:

Crumble feta cheese onto the fillets and roll them tightly. Wrap each chicken breast with 2 slices of parma ham and secure with a cocktail stick.

3:

Fry asparagus in butter until nicely cooked and tender.

4:

Fry the chicken breasts in oil on both sides well cooked. Serve with the asparagus and Dijon mustard.

Fillet Steak with Blue Cheese Recipe

Beef fillet steaks taste magnificent with a spoonful of blue cheese

Ingredients (serves 2) :

2 beef fillet steaks

salt,1/4 teaspoon

1/4 teaspoon pepper

olive oil, 1 teaspoon

Butter, 1 tablespoon

chopped fresh chives, 1 teaspoon

1 teaspoon Dijon mustard

Method :

1:

Prepare a charcoal grill or an electric griddle. Rub the steaks with oil. Sprinkle with pepper and salt.

2:

Place the steaks onto a grill or a griddle to cook, turning after 10 minutes or cooked properly.

3:

Put the remaining ingredients in a bowl.

4:

Spread the blue cheese butter mixture over the grilled steaks and enjoy.

Tip: The blue cheese butter will keep for a few days in the refrigerator, so you can prepare it in advance to save time.

Straws With Rosemary-Blue Cheese Recipe

Fragrant rosemary enriches the flavour of these delicious blue cheese straws.

Ingredients (Makes around 60 straws) :

all-purpose flour, 1 cup

1 tablespoon sugar

butter, 6 tablespoons

blue cheese, 1 ½ cups of grated by this cheese grater

chopped fresh rosemary, 2 teaspoons

buttermilk or milk, 1 tablespoon

baking powder, 1/2 teaspoon

Method :

1:

Heat your oven to 350ºF. Line a couple of baking sheets ready to bake your straws.

2:

Mix all of the ingredients in a mixer. Mix until it forms a soft dough. Cover the blue cheese dough in cling film and refrigerate for 30 minutes.

3:

Roll out the blue cheese dough on a lightly floured surface and cut lengthwise into 1/2-inch wide strips. Place the strips onto the baking sheet you prepared earlier.

4:

Bake in the oven for 8-10 minutes or until the blue cheese straws are golden brown around edges. Allow them to cool before serving.

Blue Cheese Baked Potatoes

This mouthwatering blue cheese recipe elevates the humble baked potato to wonderful new heights! Stuffed with blue cheese and sour cream, these potatoes are the perfect accompaniment to a main meal or enjoyed on their own. This is one of our favourite blue cheese recipes!

Ingredients (serves 4) :

4 Large Potatoes

4 tablespoons cooking oil

2 tablespoons of salt

½ tablespoon of black pepper

1/2 cup of soured cream

80 grams of blue cheese

3 tablespoons of finely chopped chives

Method :

1:

Preheat oven to 350ºf. Combine the pepper and salt in a small bowl.

2:

Wash the potatoes and place them in a big bowl. Sprinkle with the oil and mix well to ensure even coverage.

3:

Coat the potatoes in the salt and pepper mix. Place on a baking tray and cook for one hour or until soft.

4:

Whip the sour cream and blue cheese until smooth. Season well.

5:

Cut a cross into the top of each potato and lightly squeeze to open a space for your blue cheese mixture. Get rid of any surplus salt.

A delicious gourmet beef burger that the whole family will enjoy. Great for barbecues!

Ingredients :

1 tablespoon of butter or olive oil

1 lb ground or minced beef

1 pack mushrooms (sliced)

1 packet of burger buns

4 ounces of blue cheese

Method :

1:

Divide the beef into 4 and make burger patties. Cook on the barbecue or griddle until cooked to your taste.

2:

Fry the sliced mushrooms while the burgers are cooking.

3:

When the burgers are cooked, top with the blue cheese and mushrooms and allow to melt.

Toast the burger rolls on grill for few minutes until lightly brown.

5:

To serve, place the blue cheese and mushroom topped burgers on the buns and enjoy!
